The buffet.
The same buffet every month. It opens at half five, as the light starts to go, and stays open through the sunset. There are no courses and no portions — go back as often as you like.
To begin
On arrival-
Shell lei & welcome pour
A lilikoʻi cooler or a dry sparkling wine, handed to you on arrival.

Poke ʻAhi
Yellowfin cut that morning, with shoyu and sweet onion.

Lomi salmon Lomi lomi
Salted salmon worked through with tomato and onion, served very cold.

Simmered in Hawaiian salt.

The pit is opened at a quarter past four-
Kālua pig Kālua puaʻa
One whole pig, salted and cooked underground on hot stones, pulled by hand.

Taro leaf in coconut Lūʻau
Young taro leaves stewed slowly in coconut cream until they collapse. The dish the feast is named after.

Chicken long rice
Ginger broth, bean thread noodles, shredded chicken. The mildest thing on the table.

Salt-baked sweet potato ʻUala
Purple sweet potato, baked alongside the pig and split open at the table.

Impossible burger
Plant-based patty, grilled to order at the end of the line, with Maui onion, lettuce and a taro bun. Our standing vegan main.

Poi
Pounded taro, fresh. Served alongside the salt fish and the pig.

Breadfruit ʻUlu
Roasted in the coals until the skin blackens, then scooped out and dressed with coconut.

Halved, charred over what is left of the fire, finished with lime.

Green papaya salad
Shredded green papaya, chilli, lime, peanut. Sharp, to cut the richness.

Passion fruit, lime and soda.

Mai tai
Rum, lime, orgeat. Not sweet — ask if you would prefer the sweeter version.

To finish
Once the torches are lit-
Coconut pudding Haupia
Cut into squares and served cold in a ti leaf.
