The evening
A quarter past four, until the torches go out.
The pit is opened at 4:15 and the sun sets at around six. Times after dark are approximate.

Doors
Down the sand path off Ke Iki Road. You are met with a shell lei and a drink. Table numbers are on a board at the top of the path.

The pit is opened
The sand comes off in front of the tables. This is the one fixed point in the evening and it does not wait for late arrivals.

4:30 pm
Before the buffet
A lei table, games laid out on the sand, and the crew carving in the open. None of it is compulsory.

5:30 pm
Feast at sunset
The buffet opens as the light starts to go. Kālua pig from the imu, poke, lomi salmon, poi, sweet potato, chicken long rice, a vegan main and dessert. It stays open through the sunset, so go back as often as you like. See the full menu.

6:30 pm
Hula
Chant and gourd first, then strings once the torches are lit. Danced on the sand rather than on a stage, close enough to the tables to hear the gourd.

7:15 pm
Fire knife
The Samoan siva afi closes the programme, on the open sand. Guests stay seated for this one.

Torches down
Coffee and dessert are served. There is no set finish time.
